How to Buy Asparagus

Ok, I learned something new this past month. I thought that the thinner the asparagus is the better, similar to what might be true for a vegetable like zucchini. But it turns out that thicker asparagus doesn’t mean that it will be tougher! A lot of times, it’s actually more flavorful!

What Is a Tartine?

A tartine is a French open-faced sandwich. Typically, the ingredients are slightly fancy, but can also be as basic as butter and jam.

How to Make Sautéed Asparagus Open Faced Sandwich

This tartine recipe may look fancy, but nothing too complex is needed here:

  • Make lemon ricotta cheese – We’re brightening up ricotta cheese with lemon zest and juice. Simply stir in the zest and juice into cheese.
  • Grill bread – Don’t skip the oil on this one! Brush each side of the bread generously and grill for about 4-5 minutes per side. Use a pastry brush for best results. (It’s worth the $10!)
  • Sauté asparagus – The biggest tip when it comes to learning how to cook fresh asparagus? Don’t over cook it! This sautéed asparagus cooks for just 3-4 minutes, then gets a sprinkle of fresh lemon juice and fresh dill.

  • Assemble tartine recipe – Spread ricotta cheese over bread. Top with asparagus and prosciutto. Top with freshly cracked pepper, flaky sea salt, and fresh dill.

How to Eat an Open Faced Sandwich

This is a legitimate question! And actually something that I always think a lot about. For this asparagus sandwich, I make sure that the tartine ingredients are small enough so that you can take a bite without all of the toppings sliding off the tartine recipe.

The asparagus and prosciutto are both in small enough pieces so that you can easily get both in one bite. 🙂

Got leftovers? Make sure to store them correctly! In the case of these tartine sandwiches, all of the components should be stored separately in the refrigerator.

When you’re ready to assemble, simply grill or toast your bread, and top.

Open Faced Sandwich Recipe Ingredients + Substitutes

  • Bread – You can really use any bread here. The tartine recipe is slightly elevated (aka fancy!) so I would recommend a high-quality artisan or sourdough bread.
  • Asparagus – Nope, you can’t swap the asparagus! While I love fresh asparagus recipes that are simply prepared, this is a little different way to highlight this spring veggie.
  • Lemon Ricotta Cheese – Buy the best ricotta cheese you can afford!
  • Prosciutto – Leave off the prosciutto for a vegetarian easy open faced sandwich recipe. The prosciutto adds salt, so add more salt to taste if necessary.

Description

Is it an open faced sandwich or a tartine recipe? It’s DELICIOUS! Just 25 min to make this asparagus tartine. It’s slightly fancy without the fuss.

Ingredients

  • 1 cup ricotta cheese
  • 2 tsp. lemon zest
  • 1 Tbsp. lemon juice (fresh)
  • 4 thick slices bread (sourdough or artisan)
  • olive oil
  • 16 oz. asparagus
  • 1 Tbsp. butter
  • 1 Tbsp. chopped fresh dill
  • 1 Tbsp. lemon juice
  • 4 slices prosciutto, thinly sliced
  • freshly cracked pepper
  • flaky sea salt
  • fresh dill for garnish

Instructions

  1. Make lemon ricotta cheese. Stir together ricotta and lemon zest.

  2. Grill bread. Heat grill over medium high heat and brush both sides of bread generously with olive oil. Grill for 3-5 minutes per side, until lightly charred and toasted.

  3. Trim asparagus by breaking off the woody bottom with your hands.Slice into 1 inch pieces.

  4. Heatbutter in a skillet over medium heat. Add asparagus, sprinkle with a pinch of salt, and cook, stirring occasionally, for about 3-4 minutes. Take off of heat and stir in fresh dill and lemon juice.

  5. Layer bread with lemon ricotta, asparagus, and prosciutto. Top with freshly cracked pepper, flaky sea salt, and chopped dill.
