This is my absolute favorite brunch recipe! My sausage breakfast casserole is a regular at every sleepover breakfast and is requested every Christmas morning. You can even make it the night before and pop it in the oven the next morning. I promise it will become your favorite too!

Breakfast Casserole with Sausage

I love casseroles for feeding a crowd! Loaded with many flavors from the sausage, cheese, and buttery crescent rolls, this easy breakfast casserole recipe is hearty and oh-so-delicious!

This recipe is so easy to prepare. It tops the list of my favorite breakfast casseroles and my tater tot casserole. Not only is it a favorite make-ahead casserole for Christmas morning, but my family will also devour this casserole recipe any time of year.

I made this xmas morning and served it with fresh fruit. it was quick to make and it was liked by all. Merry Christmas!!!

Christmas Breakfast Casserole Ingredients

  • breakfast pork sausage
  • eggs
  • heavy whipping cream
  • sea salt
  • ground pepper
  • onion powder
  • paprika
  • Colby-jack shredded cheese or shredded cheddar cheese
  • mozzarellashredded
  • crescent rolls(2 tubes)
  • green onionsthinly sliced

Instead of cubed-up bread like most bread pudding casseroles, my sausage and egg breakfast casserole uses crescent rolls to pack in that delicious buttery flavor. You don’t even have to pre-bake them!

Sausage Breakfast Casserole Recipe

  1. Preheat the oven to 375 degrees F. Coat a 9-inch x 13-inch baking dish with non-stick spray. Set aside.
  2. Brown sausage in a large skillet over medium-high heat until browned through, about 6 to 8 minutes. Be sure to break up the sausage as it cooks. Remove from heat and strain off the grease. Set aside.
  3. In a large bowl, whisk together eggs, half-n-half, salt, pepper, onion powder, and paprika until fully incorporated. Add cheese and stir to combine. Set aside.

  4. Open crescent rolls and roll according to package directions. Arrange 15 rolls in a prepared baking dish in three rows with 5 rolls in each row.

  5. Add sausage crumble to the baking dish, spreading it evenly over the rolls.

  6. Pour the egg mixture over the rolls and sausage.

  7. Bake for 25 minutes. There is no need to cover it with aluminum foil. Carefully remove from the oven. Allow sitting for 5 minutes.Sausage Breakfast Casserole (7)
  8. Sprinkle top with green onions, if desired. Serve warm.

This is my favorite Christmas morning breakfast! I usually make my kid’s favorite candied bacon and air fryer breakfast potatoes, too! For another option, how about my Creamy Scrambled Eggs?

I have used the base of this recipe for so many different kinds of breakfast casseroles. I love offering different flavors when hosting brunch. The possibilities are endless!

  • You can substitute bacon or ham for the sausage in this casserole.
  • Peppers and Onions are excellent, too!
  • Add Sauteed Spinach.
  • It is delicious with Sauteed Mushrooms and Onions.
  • Kick it up by adding some jalapeno peppers.

Storing Breakfast Casserole with Crescent Rolls

  1. Cooling: Allow the casserole to cool down to room temperature after baking. This usually takes about 30 minutes.
  2. Portioning: Cut the casserole into individual servings or slices. This makes it easier to reheat only the amount you need rather than the whole casserole.
  3. Packaging: Use airtight containers, aluminum foil, or plastic wrap to cover each portion or casserole. If using foil, ensure it’s tightly sealed to prevent moisture loss and freezer burn.
